Solid ramen place! Got the karaage and regular bowl of ramen! Karaage - 10/10 super juicy and squeezing the lemon on the top of chicken made it so delicious! It's was super flavorful Ramen - 8/10 great broth and solid noodles. I opted out of the green onions and ginger. I also added some chilli and chili oil to my ramen to make it have a slight kick. Tip: On Mondays they have ramen for $9.50!

Great ambiance with tables open to the kitchen. Service is quick and friendly. We ordered two Hakata Ramens for $9.50 each-Monday special is a great value. Here are my comments on the food: - Customizable options before you order, very easy, and they actually follow what you put. My partner and I could distinguish the differences in what we ordered. - Broth has a great pork taste, very deep and rich. - Chashu pork is on the thinner side, not as juicy as I would have liked. - Noodles were perfectly cooked; I ordered them firm, and they had a nice bite. - Chashu fried rice is delicious-my favorite side that I tried there. Overall, I will definitely be coming back regularly to this place. Great value, amazing service, and clean, quality food. Love it.

Cousin wanted ramen, so the family came to Shin Sen Gumi Hakata Ramen in Fountain Valley. We made it there fairly early, so the staff was able to get us seated together at the tables to the right of the entrance. Special thanks to our server for setting it up. The restaurant is a fairly small place, with a few tables and mostly counter seating. The staff greet you when you enter and thank you when you leave - a nice touch. I also enjoyed the J-pop music they have in the background. It adds to the ambiance. I ordered the lunch set A with a bowl of Hakata Ramen and 6 pieces of Gyoza. I also added a Flavored Egg (Ajitama) on the side. The Gyoza were smaller than what I usually get from some other places, but they were cooked well and the flavor was great. You do get 6 pieces (a half order) with the lunch set, so it is a similar amount in the end. Good for sharing. One nice thing is they have bottles of soy, vinegar, and chili oil at the table so you can customize your own dipping sauce. They also have Japanese chili powder, white pepper, and sesame seeds at the table so you can add them to your dishes as you like. Got my Ajitama first, but I waited to eat it with my ramen. I like that they slice it for you and the flavor is good. My preference is a softer cooked egg, which they offer, but I was curious to see how the fully cooked one is. Flavor wise it was good, and letting it sit in the ramen broth warmed it up a little. On to the main dish: Hakata Ramen. Thin ramen noodles and creamy Tonkotsu broth - this is classic Hakata Ramen. Toppings include 3 pieces of thin sliced charsiu, green onions, and red pickled ginger. You can select how firm you want your noodles and the amount of fat in the broth. The order sheet also has options to omit the green onions and ginger. You can also let the staff know if you have any food allergies and they will try to accommodate. I opted to get everything regular. The Tonkotsu broth was flavorful, but on the light side compared to other places. Great for people who don't want that heavy feeling after your meal. Noodles were nicely cooked with a good chew. I sprinkled some sesame seeds on about halfway through and I felt it added a nice extra flavor. Also got to try their Karaage Chicken and it was pretty good. Had it with the mayo and with just a bit of lemon juice and I prefer just the lemon. The veggies were also nice for a fresh crunch. Overall, a solid Tonkotsu Ramen, with the option for customizing to your preference. Lots of items on their menu perfect for a shared group meal. I cleaned my bowl. Recommended.

If you're looking for Hakata style ramen, this is the place to go. Simple, solid broth, thin noodles. You can choose the firmness of noodles, strength of broth, and oil. Comes with chashu, ginger, green onions, and sesame seeds, which you can customize. Toppings can be ordered a la carte, with most served in side dishes, so easy to share. They offer lunch combos with different side items. And they have a daily special, like half off toppings, half off beer, etc. on certain weekdays. The place itself is pretty cramped, but turnover is quick. Plenty of parking.
